Bromelain is the protein-digesting enzyme complex of the pineapple plant, concentrated in the stem and fruit. It is the reason fresh pineapple tingles on the tongue and stops jelly from setting — the enzyme is genuinely dismantling protein, and that same activity is what skincare borrows.
How it works
Dead surface cells stay attached to skin by protein bonds. Bromelain, like its papaya counterpart papain, digests those bonds selectively — the enzyme works only at the surface it touches, cannot penetrate living tissue, and stops when rinsed away. The result is exfoliation with a built-in depth limit, which is why enzymes are the gentlest entry to the exfoliation world.
Enzymes versus acids
Acids loosen cell bonds by changing their chemical environment and keep working while in contact; enzymes chew specific bonds and are indifferent to pH within their working range. In practice enzymes flatter texture with less sting, while acids reach deeper — many formulas, and many routines, use both.
Worth knowing
Bromelain and papain share a caution: people with latex allergy are disproportionately likely to react to pineapple and papaya proteins — the latex-fruit syndrome — so enzyme masks deserve a patch test in that group. Otherwise tolerance is excellent.
In formulation
Found in exfoliating masks and powder cleansers, often paired with papain and a supporting acid. Activity depends on formulation care — enzymes are proteins, and heat or harsh preservation deactivates them.
